This review focuses on an exceptional Aultmore which was distilled in 2010, matured initially in a bourbon hogshead before being finished in an Oloroso octave for 6 months and bottled at a natural cask strength abv of 62.3% in 2018.

The Single Cask Aultmore 2010 8 Years Old Oloroso Finish (62.3% abv)

Nose: Somewhat closed off at cask strength, but with water reveals rich and heavy notes of liquorice, chocolate and dried fruit.
 
 
 
Palate: Rich and full-bodied, with a heavy oak influence to balance the intensely sweet and fruity sherry notes.
 
 
 
Finish: Long and complex; definitely a dram that benefits from a drop of water to tease out some hidden subtleties.
